He is an unnamed member of the Vice City Bikers who works as a bartender at the gang's bar, The Greasy Chopper.
Events of Grand Theft Auto: Vice City[]
The bartender appears during the missions given by "Big" Mitch Baker to Tommy Vercetti, but never speaks during his appearance. On one occasion, he is seen arm wrestling with Baker.

His character model is a modified version of a male pedestrian model found anywhere in Vice City, which is also used as a Costa Rican Gang member during the mission The Fastest Boat, although the bartender model features a goatee and a biker jacket.
Cut Waitress Variant[]
A misplaced model of the bartender can be seen in the intro cutscene for the mission Messing with the Man, where fixing the coordinates to make them appear will function correctly. There was actually supposed to be a female waitress in place of the cutscene judging from the internal model, but no such model exists. Later, the "waitress" is briefly seen again during the intro cutscene for the mission Hog Tied.
